Richard Ekkebus, Culinary Director at The Landmark Mandarin Oriental, Hong Kong, has elevated Amber, the hotel’s fine dining restaurant, to prestigious acclaim, consistently earning two Michelin stars for 16 years and the Michelin Green Star for sustainability in 2022 and 2023. Amber was also ranked 31st in Asia’s 50 Best Restaurants 2020 and received the Sustainable Restaurant Award.

Richard’s culinary journey began with an apprenticeship in Holland under Michelin-starred chefs Hans Snijders and Robert Kranenborg, earning him the “Young Chef of the Year” award. He refined his skills in France under chefs Pierre Gagnaire, Alain Passard, and Guy Savoy. His international experience includes Executive Chef roles in Mauritius and Barbados, before joining The Landmark Mandarin Oriental in 2005.

Amber’s menu reflects Richard’s fusion of French techniques with modern innovation, focusing on sustainability and mindful dining. Following the restaurant’s renovation in 2018, Richard and his team explored new ingredients and creative approaches. Amber emphasizes ethically sourced, high-quality ingredients, with dishes renowned for their presentation, textures, and vibrant colours.
